Recipe: Butternut Squash Soup

2T olive oil ( for sautéing)

1 large butternut squash

2 garlic cloves (crushed in salt)

1 onion

2 tsp ground ginger

2 tsp kosher salt

1 tsp ground turmeric

1 quart peeled tomatoes

1 1/2 cups chicken broth

1 large portabella mushroom

Pepper to taste

For larger quantities, multiply up accordingly
